Method

The technique.

    Combine the dry ingredients in the bowl.

    Add the milk, yolks, and butter in pieces. Mix on speed 2 for 12 minutes.

  3. 03

    Bulk ferment 90 minutes.

  4. 04

    Roll out to ½ inch thick and cut. Proof 45 minutes.

  5. 05

    Fry at 350°F for 90 seconds per side. Glaze warm.
